Founded in 2012, Tatsu-Ya is the brainchild of Chef Tatsu Aikawa, Chef Takuya Matsumoto, and Shion Aikawa. Having honed their skills at prestigious establishments like the Michelin-starred kaiseki/sushi bar Urasawa in Los Angeles, the team sought to introduce authentic Japanese ramen to Texas.
